There are thouuuuuusands of soup recipes out there. Some are really easy, others instead require time and dedication. I love to spend my time cooking, yet sometimes I simply want an easy and quick meal. This broccoli and cheese soup is a great option when it comes to warming me up in winter.

I had asked my Instagram followers to write the first green vegetable that came to their mind as they read my story. An interesting fact (I googled it, I swear!) is that the first vegetable that comes to one’s mind is a carrot! This time my followers were thinking out of the box as most of them wrote…. BROCCOLI!

What I love about this broccoli and cheese soup is that sometimes I use the entire broccoli instead of the florets. And it still turns out really delicious! I tend not to waste any foods, so I get excited when I can use all of it even the scraps. Have you ever tried making something out of the veggy scraps? This broccoli and cheese soup is a vegetarian soup. If you wish, you can easily use chicken or beef broth instead. I tend to use the veggie one as it is then a little lighter, especially considering that I use heavy cream and cheese.

Talking about cheese, I usually use Emmental as I believe it is the best for this broccoli and cheese soup in terms of flavor, and the easiest yellow cheese option to be found in the Italian grocery stores.   • Heat the olive oil over medium heat, then add the onions and cook for approx 5 min
  • In a large saucepan melt the butter and add flour, whisk well until smooth
  • Keep whisking and add milk and chicken broth, let it cook for around 10 minutes. Note that the mixture will harden as you keep whisking!
  • Add the vegetables, salt and pepper and cook for another 20 minutes or until the vegetables are cooked
  • Mix in the cheese and let it melt - your broccoli and cheese soup is ready!

Notes

  • you can use the entire broccoli to make this soup. Make sure to peel it a little so that you get rid of the hardest part of the stalk
  • you can use gluten-free flour
  • the smaller you slice/chop the veggies, the less time it will take to cook
  • you can hold to mix in the cheese, then add it in and heat up right before serving
