What I love about this broccoli and cheese soup is that sometimes I use the entire broccoli instead of the florets. And it still turns out really delicious! This broccoli and cheese soup is a vegetarian soup. If you wish, you can easily use chicken or beef broth instead. I tend to use the veggie one as it is then a little lighter, especially considering that I use heavy cream and cheese.
Talking about cheese, I usually use Emmental as I believe it is the best for this broccoli and cheese soup in terms of flavor, and the easiest yellow cheese option to be found in the Italian grocery stores.
