To be honest, I didn’t expect the French onion soup to be made mostly out of onions. I knew there was a lot, but I really thought there were a lot more ingredients. The chicken and beef broths make the soup even more gooey, especially if you make the broths yourself (I usually buy them).

This vegan miso soup only has a few ingredients, yet it is so comforting, rich and light at the same time. I call this soup a no-stress soup as you can make it with a blink of an eye! It may seem difficult to find the ingredients, but be ensured that you can find each and all of them in your local grocery store. Oh and I almost forgot, this soup does not contain the dashi (made of dried fish such as bonito and kelp such as kombu) that makes it be an amazing vegan soup!

The cold beetroot soup (beet soup or saltibarsciai) is definitely my favourite among all the non-Italian recipes, and so easy to make! This soup is really refreshing, especially in a hot summer day. And you know what? The soup is really at its best flavor if eaten with boiled eggs and baked potatoes (I will soon share the recipe of the best roasted potatoes).
An interesting fact about Thai cuisine is that food may seem intricate but this is actually because there is a lot of attention to the details. You may want to make this butternut squash soup without potatoes. Be ensured that you will still have a very tasty soup at the end! I like adding some potatoes as they make the consistence dense. If you prefer to make the soup with squash only, the result will be amazing.
