As most of you realized already, I love onions. I could put them anywhere and even ghettoize the main ingredient of the dish by adding loads of onions 😀 This is probably the reason why I love, I LUUUUUUV this French onion soup.

There are quite many different ways to make the French onion soup. Honestly, I find most of them to be quite similar when it comes to flavor. Why I love this one? I love the fact that the onion soup is also cooked in the oven. This is something unusual, I would say, and really gives some additional texture to the soup.

To be honest, I didn’t expect the French onion soup to be made mostly out of onions. I knew there was a lot, but I really thought there were a lot more ingredients. The chicken and beef broths make the soup even more gooey, especially if you make the broths yourself (I usually buy them).

The French onion soup is really easy to make. The most time consuming part is frying the onions. You will need a little patience until you can taste the soup as it will take another moment for it to cooking in the oven 🙂

Now, want some good news? This onion soup is loved by kids! Wonder why? Because onions have sugar in them, and they caramelize when cooking.

Do not worry about the wine you put into the soup. It is only needed to give some acidity yet you won’t feel it much. Also, it is important to put the wine at the beginning of cooking so it has enough time to cook and evaporate.

The French onion soup is so beautiful if served in a country style dishes. Make sure the dishes are oven safe! I’ve recently got mine, and did not even wonder a blink on what to make in them first.

    Preparing the onions
  • In a large pot, melt the butter and add onions, sprinkle with some salt and cook for approx 30min or until well caramelized
  • Add in chicken and beef broths, red wine, vinegar, the herbs and peperoncino. Add some more salt and pepper if needed
  • Let it simmer for approx 15 min
  • Baking in the oven
  • Preheat the oven to 350F (180°C)
  • Toast the slices of French baguette (you may use any other white bread, yet the French baguette works best here)
  • Take the soup off the heat and pour into the oven safe dishes, one per person
  • Cover the soup with toasted bread and top it with cheese
  • Bake for approx 15 min

Notes

  • make sure to use ovensafe dishes, if you do not have them small, cook them all in one bigger dish
  • you may want to use balsami vinegar instead of the regular one
  • you can use any other white bread, yet the French baguette works best in this French onion soup
  • this soup is perfect for kids, if you don't want to use red wine, add some more vinegar
