Let me tell you one thing. This white bean dip is not easy to make. It is the easiest thing ever! I have made this dip as I was so lazy to go do grocery, and I was simply checking my pantry to see if there was anything I could go for. Know that I love buying things when they are on offer, especially when it comes to saving the money on long shelf life foods.

So I have found a can of white beans, and because I was quite lazy that day, I wanted to make something really easy but still tasty. The white bean dip was the first thing that came to my mind, and it was a WOW!

The white bean dip is really quick to make. And it is so healthy, too! The taste is quite soft….well, except if you load it with fresh chili pepper just the way I do. Loooots of chili pepper! My mouth is always burning, literally. But I still love it, especially on a freshly toasted bread.

What I love about this bean dip is that everytime I make it, I can add different spices and so experiment a bit. I usually use garlic (the powdered one will work too, in case you don’t have the fresh one), cilantro, but you can try with parsley, basil, ginger… You name it!

I wanted to dedicate a line on how to store the dip. And the funny thing is that I never have to store it overnight as everytime I make it, it disappears in a couple of hours 😀 This is amazing! Also, the kids like it (do not exaggerate with chili peper when making their bites) so quick, tasty, and easy to make white bean dip!

  • In a small skillet, melt the butter over a medium heat and let your onions cook for 5 minutes or until softened
  • Get the white beans out of the can. If there is a lot of liquid, drain it but still keep it in case the white bean dip results too thick
  • When the onion is ready, pour it into a blender together with the beans
  • Add some salt, pepper, parsley (or cilantro), fresh chili pepper (optional), garlic (optional), lemon juice and blend it well
  • If you believe the white bean dip is too thick, add some white bean can liquid that you set aside earlier
  • Toast the bread (you may want to rub in some garlic)
  • Spread the white bean dip over the bread

Notes

  • use just a little of chili pepper if you are going to give this to your kids, it may be too hot!
  • you may want to add more ingredients such as sun-dried tomatoes. I usually do this when I seek stronger taste
  • feel free to use powdered garlic if you lack the fresh one
