What is the first thing that comes to your mind when you hear the word quiche? A nice French-style bake crust with some filling inside, isn’t it? This spinach bacon quiche is different as it is crustless! I love this as it is so much lighter than the one with the crust.

Tell me the truth: when making the regular quiche, we all tend to buy the crust, right? I love the crust, and I love it even more when I make it myself. In order to save some time (and my family when it comes to the last minute meal option), I like making this spinach bacon quiche that is crustless. And I have to say that the flavor is equally good!

The spinach bacon quiche is a very quick-to-make dish. It is basically just mixing the ingredients and giving them some time to cook. Not only it turns out beautiful, it is extremely delicious, too!

This spinach bacon quiche has a great mix of flavors and texture: soft and fluffy egg and spinach mixture, and the crunchy pieces of bacon that you find here and there all over the quich. Oh and the cheese, I love the cheese! As the bacon and cheese are salty, you do not need to use any additional salt! This is great, isn’t it?

Another great thing about this spinach bacon quiche is that it is so quick to make. I usually have some veggies in my freezer, and frozen spinach is one of them. So if you have some eggs and cheese in your fridge, this quiche can be a great option for your last minute meal. Kids love colors in their plates, so they will absolutely love this one too.

  • Preheat the oven to 180°C (350F)
  • Heat the butter over medium heat
  • Add onions and cook until soft
  • Stir in spinach and continue cooking, for approx 5 min
  • In a medium bowl, combine eggs, cheese, bacon, and pepper
  • Combine the spinach and eggs mixture into one
  • Pour the mixture into your cooking tray
  • Cook for 30 minutes, and let cool for a moment before serving

Notes

  • you can make the same quich with the crust (it will be equally delicious). I prefer crustless
  • you can skip the bacon (yet you will miss the flavor, I am sure!)
  • I use small baking tray so the quiche turns a little higher
  • keep an eye on the cooking time as it depends a lot on the baking tray you use
