#SlavaUkraini. It’s been 21 days now. TWENTY ONE DAYS. I can’t find the right words to describe how brave and strong the Ukrainians are. What this war taught us is that freedom is not something that comes by default, you have to fight for it and once it’s yours, you have to cherish it. Every day. This time, and in order to keep supporting this special nation and what it is going through these days, I have decided to make the Ukrainian apple cake, aka yabluchnyk. It’s moist, it’s soft and so so so delicious.

It is with no doubt that every nation has its own apple cake. We Lithuanians also have one (of course)! And I must confess I did not give much expectations to this Ukrainian apple cake (yabluchnyk), I thought it will be a regular apple cake, nothing more nothing less. But before I even put it into the oven, I felt there was something special. The dough was quite unusual to me as it was much harder than I am used to. The topping of the yabluchnyk is a must, so please do not skip that part!

When I was a kid, my Grandma was baking apple cakes nearly every week. I even have her recipe on the website, click here to check it out. It is one of my favorite apple cakes for sure, but now that I came up with the Ukrainian apple cake recipe, I must admit there are two best apple cake recipes on my favorite recipe list. Yes, the ingredients are pretty much the same, but the dough and so the flavor are completely different.

If I had to choose one, which would be my favorite, you may ask? Well, if I wanted something sweeter, I’d go for my Grandma’s cake, if I wanted something less sweet but still super good for my coffee breaks, the Ukrainian apple cake would definitely win. The next time I bake this Ukrainian apple cake yabluchnyk, I will try more combinations: dried fruit or nuts will definitely work with the base.

Also, if you have some vanilla ice-cream, it would be heavenly! Just add one scoop on top of your hot yabluchnyk before serving, you will see how “wow” it will be! In addition, since the cake is not too sweet, you may drizzle it with some maple syrup, or if you like, honey will work too. There are no limits for imagination here, but because I am here to show you how to make the Ukrainian apple cake, get the ingredients and let’s get started!

  • Preheat the oven to 180°C
  • Combine flour, sugar, salt, and baking powder
  • Add butter and combine until shortcrust
  • Add yogurt and egg, mix well until combined
  • Press the dough into a baking pan (whether an 8-inch round or 7x7-inch square like mine)
  • Cover the dough with peeled, cored and sliced apples
  • Mix together the topping ingredients and sprinkle over the apples
  • Bake for 40min
