In the first place, let me tell you that the risotto is with no doubt one of the most popular Italian dishes. There are a lot of variations in making risotto, but because I love porcini, I usually make this risotto with mushrooms.

The best Italian recipes can absolutely offer a lot of best recipes of risotto. The risotto with mushrooms is my favorite as it is really full of flavor with only a couple of ingredients.

As you may know already, risotto is a dish where the rice instead of being boiled, is actually cooked in a pan. I first tried this risotto with mushrooms recipe when I was visiting Milan, and I simply felt in love with it! The cooking time of this risotto takes approximately 20-30 min. It depends on the rice you use. If I had to buy rice specifically for risotto with mushrooms, I would go for the one that is thicker. It may take a bit longer to make, yet be sure it is better for risotto.

My good friend likes the risotto with mushrooms with sausage or meat. I do too, yet I usually make this one. By the way, I love onion so I put a lot in this risotto too. Oh and herbs, I love them! So not only for garnish, but also to mix when still in the pan. Well, you have the base, the rest is your immagination and creativity.   • Preheat the pan on a medium-low heat
  • Melt the butter or olive oil
  • Fry onion and garlic until golden brown
  • Add rice and let cook for a couple of minutes, stir frequently
  • Add a ladle of vegetable broth, let cook for a few minutes, stir frequently. Repeat for a couple of times until you use half of your broth
  • Add chopped mushrooms, salt and pepper, mix well
  • Keep adding a ladle of vegetable broth at a time, stir frequently until your rice is well cooked
  • Once in the dish, you may add parmigiano reggiano cheese, parsley and more butter
