As you may know already, risotto is a dish where the rice instead of being boiled, is actually cooked in a pan. I first tried this risotto with mushrooms recipe when I was visiting Milan, and I simply felt in love with it! I love any kind of mushrooms, and use it quite much, even making other Italian recipes (follow me on social, and you will be the first to find them out!) :)
The cooking time of this risotto takes approximately 20-30 min. It depends on the rice you use. If I had to buy rice specifically for risotto with mushrooms, I would go for the one that is thicker. It may take a bit longer to make, yet be sure it is better for risotto.
My good friend likes the risotto with mushrooms with sausage or meat. I do too, yet I usually make this one. By the way, I love onion so I put a lot in this risotto too. Oh and herbs, I love them!
