Sometimes I just want something particular. Something I have tasted long time ago, and want to return back to those times. This tofu coconut curry is one of those dishes that I do not cook often, but when I do, I feel it takes me to heaven.

There is one amazing thing about this tofu coconut curry. It is that you can make it all in one and the same pan. YES! No loads of dirty dishes, no hours for cleaning after cooking! You can make it all in one and the same pan or skillet. I LOVE it, and I am sure you agree that one pan dishes are great, don’t you?

The tofu coconut curry is all about spices. The list of them may seem long, but each and every of them plays an important role in getting THAT flavor. When people ask me what I bring from Lithuania, one of the most important things on my list is…. SPICES! We do have a lot, and all and any can be bought by weight. I load my luggage with sooo many different varieties, so I know I can make this tofu curry or any other dish anytime. How do you get along with spices? Let me know in the comments below!

The tofu coconut curry is really easy to make. What I like doing is making some more so I can heat it up the day after and enjoy it for one more day. When I do this, I do not put the tofu at all, I rather add it in before reheating so it is still harder and more intense in terms of flavor. In any case, if you do not want to bother yourself with adding it later, just put it all in as per the below recipe, and you can eat it the day after without problems.

The tofu coconut curry is amazing with some rice. You can eat it with some noodles, potatoes, couscous or just like that. When I am hungry and need something quick, I just eat it alone and it is still super delicious!

  • In a large pan or skillet, melt the butter, add onions, bell pepper, salt and pepper, and cook for approx 5 minutes
  • Add the garlic, ginger, spices and cook for another couple of minutes
  • Mix in the coconut milk, tomatoes, and tomato paste, cook for 5 minutes
  • Mix in the tofu, and cook for another couple of minutes
  • Add spinach, lime juice and zest, add more salt and pepper (if needed), and cook for another moment

Notes

  • you can substitute butter with coconut butter
  • you can use any bell pepper, red is the best but others such as yellow or orange will work, too
  • all spices are needed, yet if you miss any, don't worry, the favor will be great anyways, and next time you will make sure to have all of them :)
  • I love lime so I use double
  • you can serve this tofu coconut curry with rice, noodles or couscous
