Which one do you prefer: fried food or pan roasted food? I bet the first, right? So do I. The crunchiness is all we need (and love), whether it is fried sea food or chicken rolls. These Southwest egg rolls remind me of Mexico so much. The filling is amazingly delicious, and I am sure it will take us to Mexico immediately. Okay, at least in our minds.

I love Chinese food. Especially the spring-rolls. I am sorry to my Chinese friends, but if I had to choose between spring rolls and Southwest egg rolls, I am pretty sure I would go for the latter one… Hold on! Okay okay, I love both, but let’s try these now so we will have more options when it comes to our meal plans!

The Southwest egg rolls take a bit of time to prepare. It is actually the freezing that takes longest, the rest is cooking the ingredients and voilà, the chicken tortilla rolls are ready. The first time I made them, I didn’t keep them in the freezer and got all the filling spread all over the frying oil (this is absolutely to avoid!). Now that I mastered the thing and stopped at this best Southwest egg rolls recipe, I know I have to wait. I must. Just WAIT. This is the toughest part, but hey, send me the message and we will have a chat while waiting 🙂

Let me know tell you one thing. The Southwest egg rolls are best best best if you squeeze some lime on top before serving. This might seem weird or not so important. But trust me, this is absolutely worth going to the grocery store the last moment getting some fresh limes. Fresh lime gives so much freshness, and thinking of black beans, corn, roasted chicken, lime… 5 minutes and I am in Mexico!

If you want the Southwest egg rolls to be even more delicious (and less diet-friendly 😀 ), you can make some dip. A lovely dip with some cream cheese, mint or basil will work wonders! Do you have your favorite dip when if comes to the chicken tortilla rolls? Or maybe you have just invented one?

    For filling
  • In a medium frying pan over high heat, melt 1 tsp of butter and cook the chicken breast for approx 5 min each side, then let it cool and cut it into tiny cubes or any other shape you like
  • In the same frying pan, melt the remaining butter, add green onion and bell pepper and let them cook for approx 5 min stirring occasionally
  • Add chicken, and cook for another minute
  • Add other ingredients: corn, black beans, jalapeno or chili pepper, parsley, cumin, chili powder, salt and pepper, cook for another 5 minutes
  • Remove from heat and stir in the cheese
  • Tortillas
  • Divide the filling into equal parts so that each of your tortilla has the same amount of filling (depends on how large your tortillas are)
  • Place the filling on each tortilla and wrap it well fixing the sides with a toothpick. IMPORTANT: Make sure you do it well as the filling may spread all over the oil while frying
  • Put the tortillas into the freezer for an hour
  • In a medium saucepan heat the frying oil, then fry the tortillas, for approx 5 min each
  • Top your Southwest egg rolls | Chicken tortilla rolls with some chopped green onion and squeeze some lime before serving

Notes

  • this is a gluten-free recipe, yet if you prefer, you can use regular tortillas
  • you may need different amout of filling depending on the size of your tortillas, mine were approx 15cm / 6inch (I usually use larger so the rolls turn longer)
  • make sure to carefully secure the filling as the tortilla may open while frying (it should not as this is why we keep them in the freezer!), if you don't have toothpicks, keep the rolls in freezer for two or more hours
