The potato gnocchi or ricotta gnocchi is one of the most common Italian dishes. You can find a lot of varieties of this dish when it comes to the best Italian recipes (after the pasta, of course) 🙂

The potato gnocchi or ricotta gnocchi is a great idea for lunch (definitely one of the best Italian recipes when you need an easy recipe!). The gnocchi are so popular among Italian families as they are so quick to prepare.

What is great about this recipe is that you can make a bigger quantity of gnocchi and put them to freeze. You may need to add some more flour in between the gnocchi, as otherwise they may stick together and it will be hard to get them apart.

The most common gnocchi recipe is the one made exclusively with potato. You already know that I am a big fan of the best Italian recipes. This time though, I was looking for something more particular, and then I came up with this recipe. After having tried at least two different recipes, I decided that this is the best match of ingredients and quantities.

I adore the potato gnocchi / ricotta gnocchi with some condiment. Parmigiano cheese is a great option! You may also use a bit of butter and parsley or basil. If you want a more substantial dish, you may want to think of a tomato sauce.

  • Mix together potatoes and ricotta.
  • Add eggs, parmiggiano cheese and flour. Combine well.
  • Add some nutmeg and salt.
  • Leave the dough in fridge for an hour.
  • Put water to boil. Add some salt.
  • Take some dough and roll into a tiny rope. Cut into small pieces and put into a boiling water.
  • Once the gnocchi are on the top of the boiling water, they are ready.
