You may be thinking: blueberries vs zucchini – what a weird combination. When I heard about this cake for the first time, I had exactly the same thought. Be ensured that the blueberry zucchini bread is such a delicious and moist cake that you will absolutely love!

I have tried a couple of variations of the blueberry zucchini bread. The one we are going to try is the best match of all of them together, considering both the ingredients as well as quantities. This cake turns best if you use fresh blueberries, however, if you have the frozen ones, you can still give it a go.

The blueberry zucchini bread is the best you will EVER make. The cake is so quick to make, and because of fresh blueberries and zucchini, the flavor is amazing, and it is so moist, too. There is one thing I can promise here: every bite will be heavenly! I love this bread so much, and I am sure you will, too. Turn the coffee machine on and let’s get a bite!

Although it may sound difficult to make, this blueberry zucchini bread is really simple and especially quick. The main ingredients are those that each of us have in our kitchens, anytime. It happens that I make a huge loaf, and we do not manage to eat it all quickly. Solution? I slice it and put it into the freezer, then take some in the evening and leave it on the countertop overnight to defrost. This way we have a fresh blueberry and zucchini bread ready for breakfast.

The blueberry and zucchini cake is a MUST make! I promise, once you try it, it will become one of your favorite sweet breads. What I love is adding some fresh blueberries on top before serving. Although the cake is delicious, some fresh blueberries will take you to heaven! And if you have vanilla ice-cream, it works wonders!

  • Preheat the oven to 180° (350F)
  • In a large bowl, lightly beat the eggs, add in the sugar, oil, vanilla, and mix well
  • Add the zucchini, combine well
  • Add the flour, cinnamon, salt, and baking powder, combine well
  • Pour the batter into your cake loaf or cake pan
  • Bake for 45 min or until well cooked, then let the blueberry zucchini bread cool before serving

Notes

  • get some more blueberries for decoration, they are great with the cake!
  • if you don't have a loaf, you can easily use the cake pan
  • this is kind of a secret: I like serving this cake with fresh vanilla ice-cream, ohhhh it takes me to heaven! 
  • you can freeze the cake!
  • if kept in a glass container, the blueberry zucchini bread will still taste delicious after 3-4 days
