Are you familiar with the feeling when you want the soup, but you feel lazy chopping and preparing the ingredients? Also, you know you want a simple soup, but you would not be satisfied with just a broth. Oh yes, it happens to me too! And this Japanese vegan miso soup is a great option. Although it does not have many ingredients, not even dashi, it is still so flavorful and delicious.

The vegan miso soup is so easy to make. Do not get me wrong, it does not mean it will not have any flavor. On the contrary, because of its specific ingredients, the soup turns so delicious. I love tofu and I find it great in this soup; I like dashi yet because this is a vegan soup,we are going to skip it.

This vegan miso soup only has a few ingredients, yet it is so comforting, rich and light at the same time. I call this soup a no-stress soup as you can make it with a blink of an eye! It may seem difficult to find the ingredients, but be ensured that you can find each and all of them in your local grocery store. Oh and I almost forgot, this soup does not contain the dashi (made of dried fish such as bonito and kelp such as kombu) that makes it be an amazing vegan soup!

There is a very interesting fact about the vegan miso soup: people in Japan tend to drink it before bedtime. This is weird, isn’t it? We grew up believing a glass of warm milk will make us sleep tighter, but drinking soup is really something new. Well, if we consider the lifetime of Japanese people, this may make us change our opinion. Shall we have a bowl of miso soup tonight before going to bed? 🙂

I love miso paste, and the one I usually buy is the white one. You can use any to make this vegan miso soup: white, yellow or red. Note that the red one is stonger, use it if you want your miso soup to have stronger flavor. I find the white to be the best match and it is definitely my favorite miso paste for this soup!

  • Bring water to boil, then add miso paste and stir until dissolved, let it boil for 5 minutes
  • Add tofu and let it boil for 2-3 minutes
  • Add green onions and boil for a couple of minutes

Notes

  • if you want the non-vegan miso soup, use dashi granules (they would go into the boiling water before the miso paste)
  • you can sprinkle some fresh green onion before serving
