This vegan miso soup only has a few ingredients, yet it is so comforting, rich and light at the same time. I call this soup a no-stress soup as you can make it with a blink of an eye! It may seem difficult to find the ingredients, but be ensured that you can find each and all of them in your local grocery store. Oh and I almost forgot, this soup does not contain the dashi (made of dried fish such as bonito and kelp such as kombu) that makes it be an amazing vegan soup!
There is a very interesting fact about the vegan miso soup: people in Japan tend to drink it before bedtime. This is weird, isn't it? We grew up believing a glass of warm milk will make us sleep tighter, but drinking soup is really something new. Well, if we consider the lifetime of Japanese people, this may make us change our opinion. Shall we have a bowl of miso soup tonight before going to bed? :)
I love miso paste, and the one I usually buy is the white one. You can use any to make this vegan miso soup: white, yellow or red. Note that the red one is stonger, use it if you want your miso soup to have stronger flavor. I find the white to be the best match and it is definitely my favorite miso paste for this soup!
