Whatever side dishes exist, the oven roasted potatoes will be always my favorite! I grew up in Lithuania where potato is the number one vegetable. This is of course the reason as to why we have so many dishes where potato is the main ingredient. I can’t be modest here: Lithuanian potatoes are the best! 🙂

There are many different ways to prepare the oven roasted potatoes. Some of them are quicker to make, others require more time and effort. I love these roasted potatoes because they are extremely soft inside and so crunchy outside. What makes these potatoes so tasty?

Back to when I was a kid, I was making myself a dish of pan or oven roasted potatoes when back home from school. This was my favorite meal for lunch, and believe me, I love them so much that could have them every single day. Literally.

If you do grocery in Lithuania, you will find various types of potatoes. In most cases it depends on the quantity of starch they contain. This may sound weird to visitors, but this is because some Lithuanian dishes such as cepelinai (ok, I confess, even better than the oven roasted potatoes :)) turn better if made of potatoes richer in starch.

Living in Italy is not always easy to find good potatoes. So every time I go back home, my Grandma makes me every kind of potato dishes. Oh she knows how to spoil me! 🙂

The oven roasted potatoes are really easy to make. The preparation takes a little while, but I ensure you will love them. You will see that every single minute of the time is worth it!

Each and every ingredient I use to make these oven roasted potatoes is fundamental. Ginger, garlic and rosemary are the ingredients that make these roasted potatoes so delicious. I use whole garlic cloves or even the whole garlic head, and I usually use them later when making dipping sauces or dressings. If you want to do it too, don’t be afraid to cook some more garlic.

Although may seem heavy, potatoes are rich in vitamins, minerals and antioxidants, and act an important role when it comes to blood sugar control. Also, potatoes help reducing heart disease risk and getting higher immunity.

  • In a large pot, turn the water to boil, then add some salt
  • Peel off and wash your potatoes, cut them into cubes or any other shape you like
  • Let them boil for approx 10 minutes
  • Add olive oil, garlic cloves, chopped ginger, rosemary and salt
  • Add the potatoes and mix everything well so that all the potatoes are well covered with olive oil and salt

Notes

  • You do not want the melted chocolate dropping off the Bounty chocolate cars, so I suggest you putting them into the fridge one by one instead of waiting to work them all off
  • To get a nice even coat, I use the toothpick to cover the coconut balls, and stick them into the bananas
  • I store the Bounty bars in the fridge so they are harder and even fresher, but you can easily keep them at room temperature
