The pancakes to me is a sign of weekend! This is the time when I can start the day in my pyjamas and do things a little slower. The apple cinnamon pancakes is the best way to get the day started. I love when the kitchen fills with the scent of apple and cinnamon, it definitely makes it feel super cozy!

The apple cinnamon pancakes is also a great option for brunch. Instead of walnuts, you can use fruits (even apples!). Although made with apples, these pancakes are super delicious with some banana and blueberries, and I love them with some strawberry jam, too. If you do not have maple syrup, you can simply use fresh honey! And if you do not have milk, you may substitute it with some buttermilk. The apple cinnamon pancakes are very easy and quick to make. They are quite filling so the energy for the whole morning is guaranteed! As the maple syrup is super sweet, I tend to use sweeter apples and so brown sugar instead of the white one (that is sweeter). A great thing about these fluffy pancakes is that they are sweet enough even if eaten with no sweet toppings!

Have I ever told you that I am a big fan of coconut oil? I use it for cooking, especially when making pancakes! It does not make the pancakes stick to the pan. Furthermore, you can feel some coconut in your apple pancakes. Can there be anything better than this?! Oh and if you have kids, I promise they will eat allll of your apple cinnamon pancakes!

  • Start by combining the dry ingredients: flour, baking powder, cinnamon, sugar, and salt (this is a must-have ingredient!)
  • Combine butter, egg, milk and apple and mix with the dry ingredients, mix well
  • Heat the pan, add the coconut oil and let it melt
  • Pour a scoop of dough and let it fry for a couple of minutes. Then turn the pancakes so that both sides get beautifully brown
  • Serve your apple cinnamon pancakes topped with walnuts and maple syrup
