It happens to me that I do have a very limited time to prepare lunch or dinner. Expecially during the working days! As a full-time worker, I only have around an hour of break, and within this time I have to cook, eat, and relax. The creamy sun-dried tomato pasta is one of those options that I often go for as it is really quick, and I love the creamy texture of the dish.

I am a big lover of pasta! I do have my favorite pasta recipes, and the creamy sun-dried tomato pasta is definitely one of them. Why? Because it is so quick to make, and only requires a few ingredients that I usually have in the kitchen. This does not mean that I don’t like spending time in the kitchen – I can spend hours and hours waiting for the perfect ragù to be ready, and to then gently accompany my pasta to the table.

Have you ever wondered why some pasta dishes require a specific shape of pasta and not the other (fusilli, rigatoni, etc.)? It is because the shape of pasta matters! Do not ever tell any Italian that this makes few sense! They will explain to you all the logics behind: the shape of pasta shapes your dinner experience! I know, I know… I was thinking the same until I moved to Italy. Funny to say, but I unconsciously accepted this and I now go for the right shape of pasta.

  • In a medium saucepan add water and let it boil. Only when the water starts boiling, add salt
  • Cook pasta as per the package instructions, do not overcook!
  • Melt the butter in a large pan over medium heat, add onions, garlic and sun-dried tomatoes and cook for a couple of minutes
  • Add milk, heavy cream, vegetable broth, oregano, salt, pepper and continue cooking for another 2-3 minutes
  • Stir in the spaghetti and mix well
  • Add the cheese and chopped fresh basil leaves before serving

Notes

  • you can use any pasta (as long as it meets the "standards" :D (my favorite is spaghetti N°3 - so think and have a super nice texture)
  • if you eat meat, you may want to use chicken broth instead of the veggie one
  • I use yellow cheese or Parmesan, you can use any you like or have
