Sardinian Almond Cookies

I dare to say this is the best Italian recipe when it comes to baking. These are really simple to make Sardinian almond cookies that only require a couple of ingredients. I always wanted to make these cookies myself, but was always a bit cautious to using supermarket eggs. I have recently gotten some fresh eggs from the farmer. And the Sardinian almond cookies were the first to come to my mind!

With the indicated quantity I made 75 cookies, this is quite a lot considering that most of the Italian recipes for cookies indicate a lower quantity to make. Yet, I have stored the Sardinian almond cookies in a glass container with a lid so they were still fresh and chewy after more than a week.

These almond cookies are so substantial that you won't manage to eat a lot at once. Or at least I only manage to eat a few: I love to have a couple of them in the morning with my morning coffee or cappuccino. And although I only eat some, I still feeling full around lunch time. The cookies are not supposed to substitute any meal, of course!

You should absolutely try this recipe, it is definitely one of the easiest Italian recipes, and you will definitely feel a little bit like in the local Sardinian bakery :)

Oh and if you want even more flavory cookies, try to add some more lemon zest!

Ingredients
  • 1 kg whole almond (grinned)
  • 600 g sugar
  • 8 egg whites (beaten)
  • 2 lemon zest (grated)
  • 10 drop almond essence
Instructions
  1. Add the sugar to the beaten egg whites, beat further to get it well combined
  2. Add 2 grated lemon zest and almond essence
  3. Mix the grinned almond mass and mix well
  4. Leave in fridge to rest for 2 hours
  5. Preheat the oven to 350F
  6. Make the balls out of the dough and put on cooking sheet
  7. Bake the Sardinian almond cookies for 15-20 min.
