Rice Noodles with Shrimps

This week has been quite Asian, I made so many Asian cuisine dishes. I absolutely loved all of them, yet I am about to share one of my favorites. This time it is about a very easy to make and very delicious rice noodles with shrimps recipe. I love it, and I am sure you will. It is really quick to make, and the ingredients are quite basic that we usually have in our kitchens, right?

If you travel to Italy, it is impossible not to have any pasta dish, IM. PO. SSI. BLE. I love pasta as there are SO MANY different options on how to make it, where each is more delicious than the other. The pasta is great, but rice noodles are even better! Okay okay, at least when it comes to the rice noodles with shrimps.

Everyone loves rice noodles, I am sure you do, too! If shrimps come together, it's even better, right? And because we all love stir fry food (who doesn't?!), this rice noodles with shrimps recipe is just as right. Any shrimp will work here, the only thing to keep in mind is their cooking time, the rest is just a fun trip.

The rice noodles can be prepared in many ways. When I say many, I really mean eternal ways to prepare them, but my favorite is the one with shrimps. Also, the garlic (that I love, haven't you noticed? lol) and ginger are very good friends to shrimps. And let's not forget the soy sayce.... Oh ok, let me recap that all the ingredients are so tasty which is why this rice noodles with shrimps dish is sooooo delicious.

Ingredients
  • 200 g rice noodles
  • 2 tsp cornstarch
  • 2 tbsp hot water
  • 200 ml vegetable stock
  • 75 ml soy sauce
  • 1 tsp sugar
  • 2 tbsp butter
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 800 g shrimps
  • chopped green onions
  • 4 lime halves
Instructions
  1. Soak the rice noodles following package instructions, then drain them and set aside
  2. Dissolve cornstarch in hot water, then mix it with vegetable broth, soy sauce, and sugar
  3. In a medium skillet, melt the butter, add garlic and ginger and let them cook for a moment
  4. Add shrimps and stir for a few minutes until pink outside
  5. Add the rice noodles and toss it all to combine, then cook for a few minutes
  6. Before serving the rice noodles with shrimps, sprinkle it with green onions and squeeze the lime
Recipe Notes

  • you can use any shrimp you like, the smaller they are, the less time it will take to cook
  • if you want stronger flavor, you can add some white wine into the soy sauce and broth mix
  • lime is fundamental here, make sure you did your grocery :)
