Stuffed Bell Peppers

Ohhhhh goodie goodie goodie! These stuffed bell peppers are absolutely gorgeous! I used to make them quite often, but I never worried too much about quantities, specific ingredients and mixing the right flavors. Up to one day when I tried this new way of making the stuffed peppers. They are A-MA-ZING!

There is a part of this recipe that I would call a secret part. This is something I was never doing before when making the stuffed bell peppers. Even more and surprisingly to me, I had never thought about it before. And trust me, it absolutely makes the difference and the stuffed peppers turn extremely delicious thanks to it.

The stuffed bell peppers is an easy-to-make, delicious and impressive dish that can be served on special occasions. It is super colorful so will look stunning on your dining table. Everyone will love them, and I am sure people will ask you to make them again and again. (They may think it is super difficult to make the stuffed peppers, but don't tell the truth, shhh!)

When it comes to the bell pepper types (I mean, the colors), I tend to choose the red ones. They are the sweetest and look really beautiful when served. The stuffed peppers can be made with any you like most! Say the green bell peppers are less sweet than others, but they will complement nicely with the rest of ingredients, too.

For the meat instead, I usually go for ground beef and chicken. The combination can be any, so feel free to use other meat you like such as turkey. When it comes to rice instead, you may want to try the cooked cauliflower instead. The stuffed pepper turn delicious, too!

I know it may seem difficult, but trust me that making the stuffed bell peppers is so easy! Make sure you follow the steps here below, and I am sure you will love them. Oh and remember the secret part of this recipe!

Ingredients
  • 2 large bell peppers
  • Stuffed Pepper Filling
  • 100 g uncooked rice
  • 150 g ground beef
  • 150 g ground chicken breast
  • 140 g diced tomatoes
  • 50 g shredded cheese (I use Parmesan)
  • 1/2 chopped onion
  • 1 tbsp fresh chopped cilantro
  • 1 minced garlic clove
  • 1 tsp salt
  • 1/2 tsp pepper
  • The Secret Part
  • 1 tsp butter
  • 1/2 chopped onion
  • 120 ml beef broth
  • 2 tbsp tomato sauce
  • 2 tbsp balsamic or any other vinegar
  • 1/8 tsp chili peppers
  • 1/4 tsp salt
Instructions
    Bell Peppers
  1. Let your spouse wash, clean and cut bell peppers in half. Kindly ask to wait
  2. In the meantime, preheat the oven to 180°C (350F)
  3. The Secret Part
  4. In a medium skillet, melt the butter and cook the onion until soft
  5. Add tomato sauce, beef broth, vinegar, chili peppers, and salt and cook for a minute-two
  6. Pour the sauce into your baking dish and spread evenly
  7. The filling
  8. Bring rice and water to a boil. Boil for approx 20 min, then set aside to cool
  9. In a large bowl, mix together the remaining ingredients: beef, chicken breast, tomatoes, cheese, cilantro, onion, garlic, salt, and pepper
  10. Once the rice is cooled, add it to the meat mixture
  11. Stuff the bell peppers with the meat mixture
  12. Place the stuffed bell peppers in the baking dish over the sauce
  13. Cover the baking dish with aluminium foil and cook for approx 50 minutes
  14. Take the aluminium foil off and cook for another 20 minutes
Recipe Notes

  • I love chili peppers, but they can be optional here
  • you may use any kind of meat you like
  • you may replace the rice with the cauliflower
