Happy 2021! :) Hope the 2021 will bring more joy and health to everyone! New year - new recipes! Ready?! Ok, let's get back to serious stuff :) Now that I think of the New Year Eve, I wish I had shared the thumbprint cookie recipe some days earlier. The thumbprint cookies are so delicious, and would have been a great part of your New Year Eve dinner table.
The thumbprint cookies are really easy to make. Actually, it is nearly just mixing all the ingredients together, dipping the dough into the egg and coconut flakes, and you are done! Oh and you can substitute the coconut with nuts. It can be walnuts or hazelnuts, or any other type of nuts that you like most. Give it a try, and choose your favorite, and let me know what you like most!
The thumbprint cookies can be made with any type of jam or marmalade. I had some orange marmalade (that is a special one as it is made by my Grandma :)) so I used it for the cookies this time. If I had to go for another jam or marmalade, I would use cranberry or raspberry jam. Both are a bit bitter and I trust they both make the thumbprint cookies really delicious.
These thumbprint cookies can be given as a gift when visiting friends. I love putting them on a nice dish and taking it to my friends' house, they disappear in a minute! And knowing that it only takes a couple of moments to make them, it can really be a last minute option for the dessert!
